This is another favorite homebrew recipe of mine – a good helles bock.. This is great beer for fall evenings after a day of hard work. Helles means pale, and unlike traditional bock, this bock takes more of its flavor profile from pale malt instead of Vienna or Munich malt.
Bock is also a tax category in many countries to distinguish “high alcohol” beers from the more common beer most people drink.
This helles bock has a medium-full body and a rich malt backbone that is softened by the use of the bittering hops. This is a malt forward beer, like most German beers, and hops should only be used to offset excessive sweetness.
If you like to homebrew and have access to a good temperature controlled fermentation area, try to make some homebrew lager! This needs to ferment at 50° F and needs a diacetyl rest at 60° F for a day or so.
